Beans Anyone?

My family seems to have a difficult time with beans. And no, I don't mean with the digestion part, but that may be true as well. What I am talking about is my family rarely likes to eat them. Personally, I adore beans. Refried beans, baked beans, bean soup, white beans, black beans, red beans, kidney beans, etcetera, etcetera, I love me some beans. Beans are so healthy and so inexpensive that I would love to incorporate more of them into our diet. So, what I am asking is do you have a favorite bean recipe or dish? Will your family eat it?

I'm with you! I'm a bean junkie. :)

I make stuffed bell peppers with black beans - I'm actually going to make it for dinner tomorrow!

one 14 ounce can of diced tomatoes (drain the liquids)
one 14 ounce can of black beans (drain the liquids)
dice up a little onion for flavor

Mix those up in a bowl then stuff four bell peppers with it then add one or two spoon fulls of salsa on top. You can make your own or I use Herdez brand Salsa Casera - it comes in a 7 ounce can. I don't use the jar salsas because they're more vinegar-y and more for chip dippin. Then add some shredded monterey jack cheese (I actually don't bother shredding I just slice some up). You can put this in a crock pot on low for 8 hours or I pop it in the oven in a casserole dish at 400 for 45 minutes to an hour. When it's done serve with a dollop of sour cream. :)

Great question! I'm with you on enjoying beans FAR more than my family.

My suggestion - start very small. Add them to stews and soups but limit how much you include. A hearty stew with lots of flavor with just a few beans will not seem so overwhelming. You can slowly incorporate them more in to the diet.

Dh loves pork and beans because they are so sweet. Too sweet for me. It is one way, however, to introduce the texture and concept of beans to more reluctant family members.

One of my five kiddos likes refried beans but the others would rather pass. The more often I serve it, the more familiar it becomes.

Hope you get some other yummy recipes! I'm always impressed by families that eat beans regularly and do so in place of meat. My family likes beans but doesn't want to forgo the MEAT. Ha!

I love making Mexican burritos with tons of black beans mixed in with corn, shredded chicken, cheese, etc. If they're mixed in with everything else, it's easier to forget they're there!

How about Hummus or other bean dips with veggies or pita?

And here's a recipe for Black Bean brownies. You can't taste it at all!

Ingredients

* 1/3 cup unsweetened applesauce
* 1 Tbsp water
* 2 Tbsp all-purpose flour, for high altitude ONLY. Add to dry mix
* 1 egg
* 1 serving Brownie mix (low fat recipe), Duncan Hines brand (Dark chocolate fudge)
* 1 serving Black beans, 1 can, pureed


I followed the low-fat recipe on the box (using applesauce instead of oil). And the 2Tbsp flour is for high altitude only. This should work for any brownie mix too. Enjoy!

My family loves beans, so I have a huge amount of recipes. Will your family eat lentils? They're not so "beany".

Also, I keep canned beans in my pantry and add them to dishes that didn't call for them in the ingredients - chicken tortilla soup, taco meat, etc.
